In attempting to add additional instruments to EFB such as "next point ETE" and "next point DIST", after selecting save the instrument display (portrait mode) does not include the changes. Is there a limitation in the portrait mode on the amount of additional instruments? I have the standard instrument panel plus ETE Final, Final name, Final ETA.

Some instruments only appear when specific conditions are met. For instance, for the two instruments you identified, you need to have a flight plan with at least one intermediate waypoint between your Origin and Destination, and have at least one intermediate waypoint still in front of you. Once you pass the last intermediate waypoint, your destination is the next waypoint so those two instruments disappear to declutter the screen, and you can look at the "ETE to Final" and "Distance to Final" waypoints.

Instruments that have this "not always visible" behavior have a colored background to them (usually green, sometimes yellow).

You can confirm that they're "really there" and will show up when appropriate by tapping Inst Group -> Customize, and seeing if they're still where you put them.
